Soak clams in cold salt water for about 20 minutes for it to filter out salt, sand, or other grit naturally, transfer to tap water thereafter. You can use a stiff brush to scrub the shell clean. Most importantly, pick the clams out of the water instead of draining the water away so that the sediments do not get poured back into the clams.
To retain the sweetness of the honey clams, best served steamed, or in clear soup.
